Prep Time: 10 minutes
Cook Time: 3-5 minutes
Total Time: 15-20 minutes
INGREDIENTS:
1 cup of AP flour
3 TBS sugar
2 1/2 tsp baking powder
1/2 tsp salt
Zest & juice of one large orange
2 large eggs
2 TBS dark rum (OPTIONAL)
4 cups of canola or vegetable oil
1/2 cup powdered sugar
Instructions
Pour the canola or vegetable oil into a deep, heavy-bottomed pot or Dutch oven. Heat the oil to 350°F (175°C).
In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
In a separate large bowl, whisk together the eggs, orange zest, orange juice, and dark rum (if using) until well combined.
Add the ricotta cheese to the wet ingredients and stir until smooth and creamy.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix. The batter should be thick and scoopable.
Using a small cookie scoop or two spoons, carefully drop tablespoon-sized portions of batter into the hot oil, working in batches to avoid overcrowding the pot.
Fry for 2–3 minutes per side, turning occasionally, until the fritters are puffed and golden brown on all sides.
Transfer the fritters to a paper towel-lined plate or wire rack to drain excess oil.
Let cool for 2–3 minutes, then generously dust with powdered sugar.
Serve warm and enjoy the crispy exterior, fluffy ricotta-filled center, and bright citrus flavor.
