These little potato balls are crispy, golden, and packed with cheesy flavor. Crunchy on the outside and soft and fluffy in the middle, they're the perfect salty snack or side dish that's as easy to make as it is delicious! 🥔🧀✨

Prep Time: 15 Minutes

Cook Time: 15 Minutes

Total Time: 30 Minutes

INGREDIENTS:

  • 4 medium-sized Yukon Gold potatoes - par cooked

  • 1 cup of grated parmesan cheese + 1/4 cup for dusting

  • 2 TBS AP Flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1.5 tsp salt

  • 1/2 tsp black papper

  • 1/4 cup chopped chives

  • Oil for Frying (canola or vegetable oil)

Instructions

  • Par-boil the potatoes until just fork-tender, about 10–15 minutes. Drain and let cool completely.

  • Using a box grater, shred the cooled potatoes into a large mixing bowl.

  • Add 1 cup of Parmesan cheese, flour, paprika, garlic powder, salt, and black pepper. Mix until evenly combined.

  • Roll the mixture into golf ball-sized balls and place them on a baking sheet or plate.

  • Heat 1–2 inches of oil in a deep skillet or Dutch oven to 350°F (175°C).

  • Fry the potato balls in batches for 3–5 minutes, or until golden brown and crispy on all sides.

  • Transfer to a paper towel-lined plate and immediately dust with the remaining ÂĽ cup Parmesan cheese.

  • Garnish with chopped chives and serve warm.
