Buffalo Bleu Cheese Chicken Sandwich

If you're a fan of bold flavors, this sandwich is about to become your new obsession. Crispy, golden chicken is drenched in buttery buffalo sauce, piled high with tangy bleu cheese, melty cheddar, and juicy tomatoes, then tucked between slices of toasted sourdough. Every bite is crunchy, spicy, creamy, and downright irresistible.

Ingredients
For the Chicken
4 thin-sliced chicken breasts or 2 large chicken breasts, butterflied and pounded to ¼-inch thickness
1 cup all-purpose flour
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
2 large eggs
1 tbsp water
1 cup panko breadcrumbs
Neutral oil, for frying
For the Buffalo Sauce
1 cup buffalo sauce
4 oz unsalted butter
For the Sandwiches
1 cup bleu cheese crumbles (or freshly grated bleu cheese)
½ cup shredded sharp cheddar cheese
8 slices sourdough bread
1 large tomato, sliced
4 tbsp mayonnaise
Instructions
1. Prepare the Breading Station
Arrange three shallow bowls for breading. In the first bowl, whisk together the flour, salt, black pepper, and garlic powder. In the second bowl, beat the eggs with the water until smooth. Pour the panko breadcrumbs into the third bowl.
2. Make the Buffalo Butter Sauce
In a small saucepan over low heat, melt the butter. Whisk in the buffalo sauce until completely smooth and combined. Keep warm over very low heat while you prepare the chicken.
3. Bread the Chicken
Pat the chicken dry with paper towels. Dredge each piece in the seasoned flour, coating every surface and shaking off the excess. Next, dip the chicken into the egg mixture, allowing any excess to drip away. Finally, press the chicken firmly into the panko breadcrumbs, coating both sides evenly for a thick, crispy crust.
4. Fry the Chicken
Pour about ½ inch of neutral oil into a large skillet and heat over medium heat until it reaches approximately 350°F.
Working in batches if necessary, carefully place the chicken into the hot oil. Fry for about 4 minutes per side, or until the coating is deeply golden brown and crisp and the chicken reaches an internal temperature of 165°F.
Transfer the chicken to a wire rack or paper towel-lined plate and let it rest for 2–3 minutes.
5. Coat with Buffalo Sauce
While the chicken is still hot, dip each piece into the warm buffalo butter sauce or generously brush the sauce over both sides. The crispy breading will absorb just enough sauce to become incredibly flavorful while maintaining its crunch.
6. Toast the Bread
Toast the sourdough slices until lightly golden and crisp. Immediately sprinkle the shredded cheddar cheese evenly over four slices while they're still hot, allowing the residual heat to melt the cheese.
7. Add the Bleu Cheese
Place a buffalo-coated chicken breast onto each cheddar-topped slice of bread. Generously sprinkle the bleu cheese crumbles over the hot chicken, allowing them to soften slightly from the heat while still maintaining their creamy texture.
8. Assemble the Sandwiches
Spread 1 tablespoon of mayonnaise onto each remaining slice of toasted sourdough. Top the chicken with several slices of fresh tomato, then finish each sandwich with the mayonnaise-coated slice of bread.
9. Serve
Slice each sandwich in half and serve immediately while the chicken is hot and crispy, the cheddar is perfectly melted, and the bleu cheese is soft and creamy. Pair with crispy French fries, kettle chips, onion rings, or a side of creamy coleslaw for the ultimate comfort-food meal.
Recipe Tip: For an extra kick, drizzle a little additional warm buffalo sauce over the chicken just before serving. If you prefer a milder sandwich, use a mild buffalo sauce or reduce the amount of sauce mixed with the butter.
