Monterey Jack Smothered Chicken Breast

Monterey Jack Smothered Chicken is a cheesy, flavor-packed dinner that turns simple chicken into something truly irresistible. Tender, juicy chicken breasts are loaded with crispy bacon, melted Monterey Jack cheese, and fresh green onions, creating the perfect combination of smoky, savory, and creamy flavors. Every bite is rich, comforting, and satisfying—making this an easy family favorite that's sure to earn a spot in your regular dinner rotation.


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes


INGREDIENTS:

  • 4 thin sliced chicken breasts OR two full sized breasts, butterflied and pounded to approx. 1/4 inch thickness

  • 8 slices of bacon (I like to use hickory)

  • 1 cup Monterey Jack cheese - grated

  • 3 stalks of green onion, finely sliced

  • 2 tsp salt

  • 1 tsp black pepper


INSTRUCTIONS:

  • Preheat your oven to 375°F.

  • Season both sides of the chicken breasts with salt and black pepper.

  • Heat a skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes per side, just until golden brown.

  • Transfer the seared chicken breasts to a sheet tray or baking dish.

  • Cook the bacon until crispy, then place it on a paper towel-lined plate to drain.

  • Lay two pieces of bacon over each chicken breast, crisscrossing them on top.

  • Sprinkle the shredded Monterey Jack cheese generously over the bacon and chicken.

  • Bake for 15 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.

  • Top with sliced green onions and serve warm.
